 📝 INGREDIENTS:

For the Cauliflower:

- 1 large head of cauliflower, cut into bite-sized florets

- 1 tbsp olive oil

- 1 tbsp butter

For the Butter Sauce:

- 2 tbsp butter

- 1 large yellow onion, finely diced

- 4 cloves garlic, minced

- 1 tbsp fresh ginger, grated

- 1 tsp ground cumin

- 1 tsp garam masala

- 1 tsp paprika (or Kashmiri chili powder for vibrant color)

- 1/2 tsp ground turmeric

- 1 can (15 oz) crushed tomatoes or tomato purée

- 1/2 cup heavy cream (or coconut cream for dairy-free)

- Salt and freshly cracked black pepper, to taste

- 1 tsp sugar or maple syrup (optional, to balance tomato acidity)

For Garnish:

- Fresh cilantro, chopped

- A drizzle of heavy cream

 👩‍ INSTRUCTIONS:

1. Sear the Cauliflower: Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet or Dutch oven over medium-high heat. Add the cauliflower florets and cook for 8-10 minutes until they are lightly browned and tender-crisp. Remove from the pan and set aside. 

2. Sauté the Aromatics: In the same pan, add the remaining 2 tbsp of butter. Once melted, add the diced onion and cook for 5 minutes until soft and translucent. Stir in the garlic and ginger, cooking for 1 more minute until fragrant.

3.Toast the Spices:Add the cumin, garam masala, paprika, and turmeric to the pan. Stir constantly for about 30 seconds to toast the spices and unlock their flavors.

4. Simmer the Sauce: Pour in the crushed tomatoes. Stir well, scraping up any browned bits from the bottom of the pan. Reduce the heat to low and let it simmer for 10 minutes so the flavors meld and the sauce thickens slightly. 

5. Combine & Cream: Add the seared cauliflower back into the skillet. Pour in the heavy cream and stir gently to coat the cauliflower. Simmer for another 3-5 minutes. Taste the sauce and add salt, pepper, and a pinch of sugar if the tomatoes are too acidic.

6. Serve: Remove from heat. Garnish with freshly chopped cilantro and a beautiful swirl of extra cream. Serve hot over basmati rice or with warm naan bread!

💡 PRO TIPS:

✅  Roast it instead: For a deeper, nuttier flavor, toss the cauliflower in oil and roast it at 400°F (200°C) for 20 minutes instead of pan-searing it!

✅ Make it vegan: Easily swap the butter for vegan butter and the heavy cream for full-fat coconut milk or cashew cream.

✅ Smooth sauce lovers: If you prefer a silky, restaurant-style sauce without onion chunks, blend the tomato sauce mixture before adding the cream and cauliflower.

✅ Add some protein: Toss in a can of drained chickpeas or cubes of paneer along with the cauliflower to make it even more filling.
