Ingredients

For the Rolls:

  • 1 cup (240g) sourdough discard, straight from the fridge*
  • ½ cup (120ml) whole milk, warmed to 110°F (43°C)

  • ⅓ cup (65g) granulated sugar
  • 2 large eggs, at room temperature**
  • 3 ½ cups (420g) bread flour or all-purpose flour, plus more for dusting
  • 1 ½ teaspoons fine sea salt
  • ½ cup (115g) unsalted butter, softened and cut into small cubes

For the Finish:

  • 1 large egg + 1 tablespoon water (for egg wash)
  • 2 tablespoons (30g) unsalted butter, melted (for brushing after baking)
  • Flaky sea salt or toasted sesame seeds (optional)

Instructions

  1. Activate yeast: In the bowl of a stand mixer, combine warm milk, sugar, and yeast. Let sit 5 minutes until foamy and fragrant.
  2. Mix wet ingredients: Add the sourdough discard and 2 eggs to the yeast mixture. Whisk with the mixer on low until combined.
  3. Add flour & salt: Switch to the dough hook. Add flour and salt. Mix on low speed for 3–4 minutes until a shaggy dough forms and pulls away from the bowl slightly.
  4. Incorporate butter: Add softened butter cubes, 2–3 at a time, mixing on medium-low until fully incorporated before adding more. Continue kneading 5–6 minutes until the dough is smooth, glossy, and slightly tacky but not sticky. (It should pass the windowpane test: stretch a small piece thin enough to see light through without tearing.)
  5. First rise: Shape dough into a ball, place in a lightly greased bowl, and cover with a damp towel or plastic wrap. Let rise in a warm spot for 45–60 minutes, until puffy and nearly doubled.
  6. Shape: Turn dough onto a lightly floured surface. Divide into 10 equal pieces (~75g each). Roll each into a tight ball by tucking edges underneath, then place seam-side down in a greased 9x13-inch pan or on a parchment-lined sheet, spaced 2 inches apart.
